History of Mead
The mead recipe is one of the oldest recipes written by Archbishop Olaus Magnus in 1520. He wrote that it can be drunk for up to 8 days, but the longer it is kept, the better and purer it will be.

1. Pour honey and water into a glass jar and strain it.
2. Then with the help of a stick, dissolve the honey well in water.
3. Add your favorite fruits like dried or fresh fruits like berries, grapes, and plums.
4. When it is well mixed, place the jar in a cool, dark place. However, the ideal temperature for keeping the jar is 70 degrees Fahrenheit or 21 degrees Celsius.
5. Then cover the jar with a cloth or towel.
6. You need to pour the mixture into the jar three times a day. This way you can easily make yeast suitable for mead.
7. Wait five days like this but in winter you have to wait a little longer. When the mixture is frizzy and fanned, it becomes a Mead starter or yeast.

Ingredients of Vikings Blood Mead Recipe
- 1 quart (about 2.3 pounds) of wildflower honey
- One gallon of freshwater
- 1 oz. Dried juniper berries
- 2 Oz. fresh hibiscus flowers or 1 Oz. Dried
- 0.5 oz. Meadowsweet
- 4-5 Raisins
- 0.5 oz. Yarrow
- ¼ – ½ cup Wild mead starter or 1 packet (5 g) of Lalvin D-47 or Lalvin 71-B
Instructions for Vikings Blood Mead Recipe
First put the stove on medium-low heat. Then add water to the stockpot and mix honey in it.
Then stir it with a wooden spoon or stick until the honey is dissolved with water.
Then pour the mead into a gallon of the carboy with the help of a funnel.
Then add juniper berries, meadowsweet, hibiscus flowers, raisins, and yarrow.
Then add your homemade wild yeast to it. Or you can use a yeast packet if you want.
Then fill the jar with half the water. And close the mouth of the jar.
Then place the jar in a dark, dry place. Leave it for a month.
Your mead is made but it is still very sweet and less alcoholic. Pour it into another container to make it longer and make the mead more alcoholic.
Change the container twice more in two to three months to get clear mead.
In the next step, pour the mead into the bottle. One-gallon batches need to be bottled for about 6-7 months. However, add a little sugar to the mixture and stir carefully to see if it is ready to be bottled.
If it produces foam or bubbles then the mead is still germinating. Then cover the container with a lid and wait a few more days. If you hear the sound of freezing then it is still germinating.
When your mead is ready, choose a beer bottle with a new lid to bottle it. And wait, leave it that way for about 6 months to 1 year.
