Ingredients of Pancheros queso recipe

  • 4 jalapenos
  • 8 ounces finely chopped bacon
  • 8 Anaheim chiles
  • 8 ounces crumbled chorizo
  • 2 tbsp. of minced garlic
  • 1 large diced onion
  • One 28 – ounce can of green chilies and diced tomatoes
  • 2 pounds cubed and processed Velveeta cheese
  • 8 ounces shredded cheese of jack pepper
  • Two 12-ounce cans of evaporated milk
  • 2 tbsp. of fresh cilantro ( chopped)
  • Tortilla chips ( for serving)

Instructions for Pancheros queso recipe


Start your stove and set the metal tongs on it. Hold the chilies over the stove’s flame one-by-one to roast them. Hold them until the Chile skins are completely charred.


Place the completely blackened chilies in that resealable plastic bag. Allow the bag for 20 minutes to sweeten it by sealing the bag. 


Scrap off most parts of the roasted skin with a knife. Steam the chilies. Now seed and then dice them.


Now turn your heat on over medium and set the large pot. Add the chorizo and bacon to the pot. Cook 10 – 15 minutes or more to render out the fat.


Set the food processor to add the onion and garlic to it and pulse them until they are pasted completely.


Drain all the fat off from your chorizo and bacon. Add the puree of onion and garlic to that pot and cook it for 3-4 minutes.


Pour the green chilies and diced tomatoes into that food processor and then pulse it slightly. Add juice and other all spices to that pot.


Place then it folding in the preserved diced Chiles and cook for about 4 minutes. Whisk both evaporated milk and all cheeses slowly. 


Cook for more than 5 minutes but make sure that the bottom cannot be scorched through heat.
