Ingredients of Guyanese Pumpkin Curry Recipe

  • 1 and ½ Ibsfinely chopped pumpkin
  • 3 tbsp vegetable oil
  • 1 small sliced yellowonion
  • 5 garlic minced cloves
  • Wiriwiri peppers, 2 or more as you necessity
  • 1 large size tomato
  • 1 tsp of salt
  • Dashing of black pepper
  • Dashing of adobo
  • Dashing of dried herbs, any kind you like
  • 1 twig of thyme
  • ½ tsp of curry powder
  • ¼ tsp of garam masala
  • ½ tsp of brown sugar
  • ½ cup of water
  • ¼ Ib amount shrimp, more you may choose
  • Black pepper
  • Dashing garlic powder
  • Dashing cayenne pepper

Instructions for Guyanese Pumpkin Curry Recipe

Soak the white belle shrimp into cold water. Soak one lime juice with shrimp to free it from smell and smack of any kind rank.

Sit it for 25 minutes. Rinse it twice with cool water and now set it aside.

First, Peel the pumpkin’ s skin and chop it into large size pieces.

Cut every large pumpkin piece into ½ inch smaller pieces and set them aside into a bowl.

Heat a fry pot and drain some tbsp oil. Now chop the wiri wiri pepper, onion and garlic.

Add them to the oil of the hot pot and fry such onion will be fragrant and tendered.

Chop tomato with the time of frying onion. Add diced chopped tomato with onion when it will be tender.

Cook them to be soft mixed like sauce. Mix pumpkin to it and cook 10-12 minutes with medium heat.

Add black pepper, 1 tsp of salt, thyme, brown sugar, curry powder, adobo dash etc. and cook more 15 minutes. Mix ½ cup of water and cook pumpkin for 20-25 minutes.

Now let a frying pan heat on medium high and add shrimp with seasonings.

Cook and allow water to be evaporated from the shrimp. When shrimp will be crispy and dry then add it to the pumpkin.

When there will be little water pumpkin may be done and it will begin dissolving and loosening.

Use spoon so that you can break up whole pieces mash pumpkin.
