A few days ago, I was in the kitchen and needed to make a quick breakfast. I found myself with some eggs and milk, so I decided to whip up some pancakes.

  • 2 cups or half pound all-purpose flour
  • Baking soda one teaspoon
  • Oats 1/4 cup
  • Cornmeal 1 and 1/2 tsp
  • Flax seeds 1 and 1/2 tsp
  • 1/2 teaspoon salt
  • Four tablespoons (60 ml) vegetable shortening or butter, at room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup (45 ml) milk
  • Sesame seeds 1 tsp
  • Three eggs, beaten
  • Water ( As per needed)
  • Maple syrup, for serving

Preparing the spices

Preheat the oven to 400 degrees F (200 C). Grease an 8-inch baking pan with shortening or butter, and dust with flour.

Whisk together the all-purpose flour, baking soda and oats in a medium bowl.

Combine cornmeal, flax seeds and salt in a small bowl; set aside for later use (optional).

In the same medium bowl where you mixed together the dry ingredients earlier on, mix in vegetable shortening or butter until well blended.

Stir in beaten egg and enough water to make a pancake batter that falls off of a spoon – about 1/2 cup (120 ml).
