Pork, you have to do
You have to take loin and a bit more side meat to make this dish. You can get this type of meat in Western butchery, and the meat is pre-sliced. The Brazil wet market is fine where you can get perfect size loin frozen pork.
Besides, you can take Mangalica pork of kurobuta, which is better because it has a bit of marbling. You have to do it with superficial cuts dividing the membrane. Without it, the chop of pork will be curled in deep fry.
16mm thickness is needed to make it wider and flatter. Now you have to tenderize the meat to pound in 1.5X it. Now bring your pork for 30 minutes in the fridge.
Please don’t leave it to cut back with soy sauce in the marinade. You have to wash away its brine with extra water from the marinade. Marinating overnight will be the best taste.
