Ingredients of Din Tai Fung cucumber recipe

  • 8 Persian cucumbers
  • 1 and 1/2 tbsp of kosher salt
  • 3 tbsp of rice vinegar
  • 2 tbsp sugar
  • 1 and 1/2 tbsp of Mirin
  • 1/2 teaspoon salt
  • 1 and a half tbsp of sesame oil
  • Grated garlic of 3 gloves
  • Chili oil while serving
  • 1/8 teaspoon black pepper flakes (optional)

Instruction for Din Tai Fung cucumber recipe

Cut the ends off of the cucumbers and then slice them into thin rounds using a sharp knife or slicer. (approximately 1/2 inches sized slice) and rinse under running water to remove any dirt or sand.

In a small bowl, combine the slices with Kosher salt. Mix well and put in the refrigerator for 20-30 min.

Now rinse off the cucumbers again. Let it dry off for a few minutes.

Mix the rice vinegar, sugar, Mirin, garlic, sesame oil, and salt in another bowl. Pour it into a large serving bowl and add the cucumbers to it. Toss everything well until all of the cucumbers are coated with sauce.

Wait for a minimum of 4 hours to marinate the cucumbers. This will flavor the cucumbers and makes them juicy

Toss each cucumber with chili oil before serving (optional). Sprinkle black pepper flakes on top if desired.
