Ingredients of Bukayo recipe

  • 3 cups of buko coconut meats
  • 1 and ½ cups of brown sugar
  • ½ cup of Muscovado sugar
  • 2 and ½ tbsp of buko water or juice
  • 3 pieces of calamansi
  • Sesame seeds
  • Banana leaves

Instructions for Bukayo recipe

Pour firstly the Muscovado sugar, coconut juice and brown sugar into the saucepan. Combine them well and apply the heat at your oven. Cook and bring it into a simmer.

Heat it at very lowest speed and cook for 1 minute or more until the sugar is dissolved.

Now add the calamansi juice and buko strings to it.

Mix that buko strings for making the coat with sugar. Cook continuously 15 minutes or until the sugar syrup becomes thickened and caramelized.

When your Bukayo mixture will be enough sticky, then made it shape and it will be done.

Now turn off your heat. Allow it be cool about 1 or 2 minutes. Set a banana leaf on the top of a flat circle place and the leaf which is prepared with greased completely from before.

Form that Bukayo mixture on that leaf and do this process repeatedly until any mixture rests. Set aside and wait for drying completely.

When this recipe will be dry completely, serve it in the jar or store in refrigerator.
